Preheat oven to 400.Combine first 5 ingredients in a large bowl. Toss to blend and let stand 15 minutes. Spoon into prepared pie shell (frozen or homemade—see sidebar), top with 2nd crust and crimp edges. Brush with a little milk, sprinkle with sugar, and prick holes with fork. Southern Entree Southern Fried Chicken This classic southern recipe calls for dipping the chicken in a bath of buttermilk before frying.
Batter: combine first 5 ingredients in a paper bag. Dip chicken pieces into buttermilk, drop into flour mixture in bag and shake to coat each piece. Set chicken on a rack for 15 minutes to allow batter to adhere before frying.* Frying: in a deep skillet, heat oil to 375. Carefully drop in coated chicken pieces, in batches. Fry, turning once or twice, till golden brown, about 15 min. Reduce heat to 350 and fry another 10-15 minutes till cooked through. Drain on paper towels and serve. * You can also bake the chicken to avoid frying in fat. Spray batter-coated chicken pieces with oil, place on a well-oiled baking sheet and bake at 425 for 30-35 minutes. Turn once to brown both sides. |

Southern Entree Honey Glazed Ham Moist, salty ham, brushed with a sweet and tangy glaze.
Baking: preheat oven to 325. Place ham, fat side up, in large roasting pan and bake for 2 hours. Glaze: while the ham is baking, combine the honey, brown sugar and mustard in a sucepan. Stir while heating, and allow to thicken. Remove from heat and set aside. Final Baking: Remove the ham after 2 hours, peel off skin, if any, and score fat into a diamond shape. Insert a whole clove in the center of each diamond, and brush with the glaze.* Return the ham to the oven for 30 minutes, making sure glaze doesn’t burn. * Some cooks brush on only half of the glaze during the final baking, reserving the rest for serving. |
